Steamed Cod with Garlic-Caipoh

Method:
- Clean & pat dry cod steak, lightly season with salt, sugar, cornflour. Lay a few slices of ginger on cod. Set aside (or in fridge if this step is done ahead of time)
- Bring water in steamer to boil, steam cod steak for 5 min.
- Add some oil to a frying pan, fry minced garlic till fragrant and add in cai poh, continue to stir fry a minute or two.
- Adjust to taste, with dashes of sugar. Add in chilli padi & sesame seeds and give the toppings a quick toss.
- When the timer reaches 5 min, off the heat. Drizzle the sauce mixture over the steamed cod, followed by the cai poh toppings & shallot oil. Cover the lid for another minute.
- Garnish with coriander/spring onion before serving.
Note: Can omit chilli padi for non spicy version.
