King Salmon with Shroom-Capsicum sauce

King Salmon fillet

2 tbsp

Diced Red & Yellow Capsicum

Fresh Shiitake Mushroom, diced

3-4

Ginger Slices

1 clove

Garlic, minced

Garnish

Coriander 

For Sauce:

1½ tbsp

1½ TBS Oyster sauce

1 tbsp 

Light Soya sauce

¾ tsp

Sugar

Dashes

Sesame Oil

Water

To taste

Cornstarch (to thicken sauce)

 

Method:

  1. Rub salt & sugar on cleaned salmon fillet, leave aside for at least 30min.
  2. Air Fry salmon at 200degC for 12 min.
  3. While the salmon is in the airfryer, proceed to cook sauce.
  4. Heat some oil in a pan, add ginger & garlic. Fry for a few minutes, do not brown garlic too much. Add diced mushroom & capsicums, fry briefly and pour in some water.
  5. Add in oyster sauce, light soya, sugar & sesame oil. Add more water, bring mixture to a gentle boil. Adjust seasoning if necessary.
  6. Thicken sauce with cornstarch.
  7. Dish out air fried salmon fillet & top with sauce. Garnish with coriander.
