King Salmon with Shroom-Capsicum sauce

For Sauce: |

1½ TBS Oyster sauce |

Method:
- Rub salt & sugar on cleaned salmon fillet, leave aside for at least 30min.
- Air Fry salmon at 200degC for 12 min.
- While the salmon is in the airfryer, proceed to cook sauce.
- Heat some oil in a pan, add ginger & garlic. Fry for a few minutes, do not brown garlic too much. Add diced mushroom & capsicums, fry briefly and pour in some water.
- Add in oyster sauce, light soya, sugar & sesame oil. Add more water, bring mixture to a gentle boil. Adjust seasoning if necessary.
- Thicken sauce with cornstarch.
- Dish out air fried salmon fillet & top with sauce. Garnish with coriander.
