Salmon Soup

Salmon portions

Method:

  1. Thinly slice 0.5 onion and saute till soft and golden.
  2. Add desired spices and saute for 1 min. I used bay leaf, mustard seeds, and 0.5 tsp of masala to give it a mildly smoky, spicy flavour - you can also use paprika, cumin, coriander, turmeric, etc.
  3. Add dashi broth (I used dashi powder from Don Don Donki and combined with water!), add in 3 chopped tomatoes. Season to taste. Add in less broth/water than you think you'll need, because the tomatoes will release more liquid when they cook. Simmer till tomatoes are almost soft.
  4. Add in your salmon and continue to simmer. Don't boil or your salmon will overcook! Once your salmon is half-cooked, turn off the heat, and use a fork or a pair of chopsticks to tear it into small chunks. The residual heat should cook the salmon till it's nice and tender.
  5. Top with cilantro and serve.
