Crab cakes

Serves (no. of pax): 2-3 pax
Difficulty Level: Easy
Ingredients:
| Quantity | Ingredients | 
| 250g | Surimi crab leg, shredded | 
| 2.5 tsp | Mayo | 
| 1/2 | Egg | 
| 1 tbsp | Dijon mustard | 
| 1 tsp | Worcestershire Sauce | 
| 7 tbsp | Breadcrumbs | 
| 1 tbsp | Chopped coriander | 
Method:
- Whisk together 2.5 tsp mayo, 0.5 egg, 1 tbsp Dijon mustard, 1 tsp worcestershire sauce.
- Shred 250g crabstick/surimi in the food processor (or you can use real crab meat, which you won't have to shred).
- Add shredded surumi to sauce, together with 7 tbsp breadcrumbs and 1 tbsp chopped coriander. Form mixture into 8 patties.
- Coat pan with oil, heat until shimmering. Cook the patties until golden and crispy, 3 to 5 min per side. Turn up the heat if your patties are taking too long to brown.
- Garnish with more chopped coriander and serve!
