Crab cakes

Surimi crab leg, shredded 

2.5 tsp

Mayo

1/2

Egg

1 tbsp

Dijon mustard

1 tsp

Worcestershire Sauce

7 tbsp

Breadcrumbs

1 tbsp 

Chopped coriander

 

Method:

  1. Whisk together 2.5 tsp mayo, 0.5 egg, 1 tbsp Dijon mustard, 1 tsp worcestershire sauce.
  2. Shred 250g crabstick/surimi in the food processor (or you can use real crab meat, which you won't have to shred).
  3. Add shredded surumi to sauce, together with 7 tbsp breadcrumbs and 1 tbsp chopped coriander. Form mixture into 8 patties.
  4. Coat pan with oil, heat until shimmering. Cook the patties until golden and crispy, 3 to 5 min per side. Turn up the heat if your patties are taking too long to brown.
  5. Garnish with more chopped coriander and serve!
