Miso glazed baked Cod

Organic miso |

Brown sugar |

Mirin (optional) |

Mushroom powder |
Method:
- Combine the miso, brown sugar, mushroom powder and mirin, heat up and slowly stir until they are all fully dissolved. Set aside.
- Rinse cod fish and pat dry with paper towels.
- Marinate the cod with miso mixture for at least 30 minutes.
- Preheat the oven.
- Place the cod in the oven for 5 minutes, or until the top is slightly charred and glaze has caramelized.
- Remove fish from the oven. Ready to serve.
