Miso glazed baked Cod

1 portion


2 tbsp

Organic miso

4 tbsp

Brown sugar

1 tbsp

Mirin (optional)

1 tsp

Mushroom powder



  1. Combine the miso, brown sugar, mushroom powder and mirin, heat up and slowly stir until they are all fully dissolved. Set aside.
  2. Rinse cod fish and pat dry with paper towels. 
  3. Marinate the cod with miso mixture for at least 30 minutes.
  4. Preheat the oven.
  5. Place the cod in the oven for 5 minutes, or until the top is slightly charred and glaze has caramelized.
  6. Remove fish from the oven. Ready to serve.
