Tuna is a delicious and very delicate fish. It’s soft texture  makes it an ideal fish that can be consumed raw. Tuna has a very high iron content which causes the colour of the flesh to turn brown only hours post mortem. Breathing charcoal releases a type of CO/CO2 which helps to prevent the oxidation of the tuna meat, so retaining it’s appetizing red colour.

This process is called “Tasteless Smoked”.
