Cooking suggestions: You may stir-fry the thinly sliced Abalone in hot oil or you may use butter to give it a delicate flavor. Use fresh ingredients like spring onions, garlic, shallots, bell peppers or chilies to get the presentation you like. To get the flavours you like you may use products like soya and oyster sauce, Thai sweet chilly sauce or spice it up with Wasabi. Bon appétit. |

Wash your Abalone immediately after defrosting under running water. You may use a towel or brush to get the job done. If you like the Abalone very clean you may want to dip it for a few seconds into hot water. This will make the job much easier. |

Frozen California Red Abalone

Preparation: To prepare the Abalone for stir-frying simply slice the cleaned Abalone as thin as you can. There is a trick. Place the Abalone for half an hour into the freezer and you will find it easy to slice it while half frozen. |

Preparation: Clean and slice the Abalone as described above. If you are however just after one or two simple Yu Shang you may purchase the single packed clean Abalone. See below. Remember to slice it while half frozen. |

Slow cooked Abalone |
|
Preparation: Clean the Abalone as described above. Slow cook the Abalones in water and a touch of salt. You may add some brandy or rice wine to taste. Cook till tender. |

Stir-fried Abalone are quickly cooked. The beautiful white meat remains tender and lightly crunchy. Unlike the slow cooked versions they do not shrink. |
